This has always been a family favorite. It's quick, easy, and only dirties up one pan. It's also very versatile.
Texas Hash
1lb ground beef **
1 large onion, sliced
1 large bell pepper, sliced
1 cup rice, uncooked
1 (10oz) can Rotel Diced tomatoes (it has some Mexican type spices in it)
2 cups water
2 tsp salt
2 Tbsp chili powder
shredded cheese (optional)
Brown ground beef, drain excess fat. Add onion, bell pepper, and 1Tbsp Chili powder and cook until onion and bell pepper is tender. Add tomatoes (and juice), rice, water, salt and the rest of the chili powder. Bring to a boil, cover and reduce heat to low and simmer for 20-25 mins until rice is done. Sprinkle with shredded cheese and you're done!
Great with Texas toast and a salad.
** You can substitute chicken for beef. I cook the chicken in a little bit of taco seasoning until meat is no longer pink. Continue on with the recipe.
Tips for leftovers-
- try adding taco/fajita/enchilada seasoning to the mixture for a variety of flavoring.
- Spoon into taco shells (or tortilla shells) top with refried beans, lettuce, tomato, salsa, etc.
- Can also be used to top nachos.

Mom's Beer Bread and Cheese dip
I went home to Florida for the holidays this year and my mom had made this amazing beer bread. Ok I absolutely hate beer, but you can't really taste it all that much in this recipe. I thought it was good! She also made a Baked Cheese Dip. It's definitely not diet friendly, but it's SO good and addicting.
Mom's Beer Bread
3 cups Self Rising flour- sifted
2-3T sugar
1-12oz beer (I think she used Coors, but be creative!)
1/2c butter
Mix sugar, flour, and beer together. In a loaf pan, coat the side of pan with 1/4c of the butter, there will be some butter "standing"...that's ok. Put bread mixture into loaf pan and pour remaining butter on top. It will look like a pool of butter, but it gets absorbed. Bake at 375* for about 1 hr. Awesome!
Mom has suggested adding different things to bread batter like Cheddar cheese, onions, etc.
Baked Cheese Dip
1c Cheddar Cheese, grated
1c Monterey Jack cheese, shredded
8oz. cream cheese, softened
1 1/2 c sour cream
2T powdered chicken bullion
1tsp Worcestershire Sauce
1small onion finely chopped.
Mix all ingredients together with an electric mixer. Put into a baking dish (medium square worked best for us). Bake at 350* for about 60-75mins. Delish!

Moroccan Sloppy Joes
Ok this recipe was a complete mess up of another recipe that I was trying to make. The original attempt was to make Krefta,a spicy Moroccan Meat Skewers, but I couldn't get the meat to stay on the skewers. Chicken Basil and Cream
Here's my version of Chicken Basil and Cream. Dont let the length of this post fool you, it's SO easy to make!
Chicken part-
1lb boneless, skinless chicken breasts, cut into bite size pieces
1 clove garlic (2 cloves if you like garlic like I do)
1T Herbs de Provence (basil, marjoram, thyme, sage, savory and rosemary mixture)
cooking oil
white cooking wine. (to taste, I used 1/8cup)
In a bowl, mix together everything except the oil. Oil a non-stick frying pan, and cook mixture over medium-high heat until chicken is done.
Basil Cream Sauce
1 chicken bullion dissolved in 2c water)
1T dried basil
1 1/2T margarine
1 1/2T flour
1/4c Parmesan cheese shredded *make sure it's shredded and not grated, it doesn't give the same consistency*
1tsp crushed garlic
(about) 1 cup whipping cream
Make a roux with flour, margarine, and crushed garlic. Add everything else together, saving the cream for last. When adding the cream, do so slowly to get the consistency you want. Let simmer just a few mins to let flavors cook in.
Serve Chicken and cream sauce over cooked pasta.
It's delicious!
