Grammy B's Tater Soup

This is my mom's fabulous recipe. Enjoy :-)

2-5lbs yellow potatoes, chopped into bite sized pieces
1lb bacon
4 heaping Tablesppons of flour
1 bunch of green onions, chopped
1C shredded sharp white cheddar
4C buttermilk
3C potato stock (from the potatoes you're going to boil)
Chives, to taste
Crushed red pepper, to taste
Salt, to taste

In a large pot, boil potatoes unttil desired tenderness.  In a seperate large pan, fry bacon. Set bacon aside and add green onions to skillet (with the grease from the meat). Cook for about a minute on medium heat, then slowly add flour to make a roux. Once roux is made, slowly add stock and buttermilk and simmer for 5 mins. Drain potatoes, using the same pot, mix everything together(potatoes, roux mixture, cheese, chives, peppers, salt) and simmer for 30 mins, stir occasionally. Enjoy!

Soy Garlic Marinade

6T soy sauce
10 cloves garlic, minced (yes TEN)
2T ketchup
2T vegetable oil
2tsp salt
1tsp ground black pepper
1tsp dried oregano

Mix all ingredients together thoroughly. Marinate meats for 4-6 hours, poultry for 2-3 hours.

Fabulous if you LOVE garlic :-)

Hot & Spicy Poultry Injection and Marinade

1 cup water
1 chicken bullion cube
4T Louisiana Hot Sauce
3T Worcestershire Sauce
1T garlic powder
1T salt
1T cayenne pepper

Warm water enough to dissolve the bullion cube.  Add remaining ingredients and stir until the salt is dissolved. Enjoy!

Amazing Chicken Marinade

1/4 cup cider vinegar
3T prepared mustard
3 cloves garlic, minced
1 lime, juiced ** i used the lime juice that comes in the little plastic container**
1/2 lemon, juiced **same as above**
1/3 cup brown sugar
1 1/2tsp salt
6T olive oil
ground black pepper

In a large non-reactive container, whisk together ingredients  beginning with cider vinegar through salt. Then whisk in olive oil then pepper. Marinade chicken 8 hours or over night. Enjoy!

Spicy Korean Rib Marinade

1 cup soy cause
1 cup brown sugar
3/4 cup water
1/2 cup white vinegar
1T powdered ginger
2 gloves garlic, minced
1tsp red pepper flakes
1/2tsp cayenne pepper

Dissolve sugar in soy sauce, water and vinegar. Add remaining ingredients and mix well. Use as a marinade up to 8 hours.

Spicy Jerky Marinade for beef jerky

Spicy Jerky Marinade-

1 cup Soy Sauce
1/3 cup canola oil
1/3 brown sugar
3T cooking sherry
1T tabasco
2 gloves garlic, minced
1tsp ground ginger.

Combine all ingredients. Marinade for 2 hours. Cook meat in oven or dehydrator as usual.

Moroccan Sloppy Joes

Ok this recipe was a complete mess up of another recipe that I was trying to make. The original attempt was to make Krefta,a spicy Moroccan Meat Skewers, but I couldn't get the meat to stay on the skewers. So It turned into a pan of ground pork and spices, then I threw some left over homemade BBQ sauce on it and it was so good.

Moroccan Sloppy Joes
Meat Mixture:
1lb lean ground pork
1 1/2 T minced garlic
2tsp ground cumin
2tsp ground paprika
1/3 cup finely chopped onion
1 tsp salt
1 tsp ground pepper
1 egg
1/4 cup bread crumbs

Mix all ingredients and cook in a frying pan until meat is done.

Memphis BBQ Sauce
2c ketchup
1/2c brown sugar
1/4c cider vinegar
1/2tsp cayenne
1T onion powder
1/2tsp celery seed
1tsp salt
2tsp garlic
1/2c prepared yellow mustard
1T chili powder
1T ground black pepper
2tsp liquid smoke
3T Worcestershire Sauce
2 Canola Oil

Simmer all bbq ingredients together except oil for 25 mins. Remove from heat and whisk in oil.

Mix BBQ and meat together, in the portions desired.  Serve on bread. Very good!

Put left over BBQ sauce in an air tight container and refrigerate.

Fried Oreos....who knew they'd be good?

This is my adaptation of fried oreos...

1bag of double stuff oreos (you're not gonna use the whole bag, i promise)
1 1/4 pancake mix
3/4c milk
1 egg
2 tsp oil
oil for frying

Mix pancake mix, milk, egg and oil together. Dip oreo into batter and fry until golden brown. Remove and dust with powdered sugar (if desired)

Make sure you have a glass of water or milk ready!

Beef and Pork Burgers

I had always heard that pork and beef was a good meat combo for burgers but only recently tried it. This is my own blend of meats and spices.

Clay's Beef and Pork Burgers

1 1/2lb ground beef (at least 85/15 mix)
1lb ground pork
2 eggs
1/3c Italian seasoned breadcrumbs
1 clove garlic
1/4tsp black pepper
2T Worcestershire Sauce
1/2T Onion Powder
2T Hickory Smoke Allegro Marinade
1tsp white cooking wine.

Mix all ingredients together and let set for at least an hour before cooking. Grill and enjoy! Goes great with the St. Louis Style BBQ.

St Louis Style BBQ Sauce

I'm constantly looking for amazing BBQ recipes, so here's an awesome BBQ sauce.

St Louis Style BBQ Sauce

3c tomato sauce
1/2c brown sugar
1/2c minced onion
2 cloves garlic
1/2c cider vinegar
1/4c spicy brown mustard
2T Worcestershire Sauce
2T soy sauce
1T Hickory Smoke Allegro Marinade

Whisk together and simmer for 15-20 mins. Delish!

Double Chocolate Layer Cheesecake

Double Chocolate Layer Cheesecake
2pkgs (8oz each) cream cheese, softened
1/2c white sugar
1/2tsp vanilla extract
2 eggs
3 squares semi sweet Baker's chocolate, melted, and cooled.
1 (6oz) Oreo pie crust

Preheat oven to 350. Beat cream, sugar, and vanilla until well blended. Add eggs, one at a time, on low speed.  Remove 1 cup of batter and mix with chocolate. Layer the plain batter, then the chocolate batter into pie crust. Bake for 40mins or until center is almost set. Let cool at room temperature then refrigerate for 3 hours. Top with cool whip or fresh strawberries if desired.

Southern Three Bean Chili

This was an amazing version that I adapted from a couple different sources.

Southern Three Bean Chili
1lb beef tip, cut into about 1/2'' cubes
1tsp oregano
1tsp ground cumin
1/2tsp chili powder
1tsp crushed garlic
pinch crushed red pepper flakes
1tsp Worcestershire Sauce
1-2tsp Reduced Sodium Soy Sauce

Combine ingredients and cook beef until about medium-well. (It's gonna cook some more in the crock pot)

2 cans New Orleans Style Chili Beans
2 can's Red Kidney Beans
1 can Black Beans
1 envelope chili starter mix.
1tsp paprika
1tsp garlic
dash of Red Wine Vinegar
dash of Louisiana Hot Sauce

Combine all ingredients (beef and beans) in a crock pot. Cook until beef is tender. Enjoy!

Chicken Basil and Cream

Here's my version of Chicken Basil and Cream. Dont let the length of this post fool you, it's SO easy to make!

Chicken part-
1lb boneless, skinless chicken breasts, cut into bite size pieces
1 clove garlic (2 cloves if you like garlic like I do)
1T Herbs de Provence (basil, marjoram, thyme, sage, savory and rosemary mixture)
cooking oil
white cooking wine. (to taste, I used 1/8cup)

In a bowl, mix together everything except the oil. Oil a non-stick frying pan, and cook mixture over medium-high heat until chicken is done.

Basil Cream Sauce
1 chicken bullion dissolved in 2c water)
1T dried basil
1 1/2T margarine
1 1/2T flour
1/4c Parmesan cheese shredded *make sure it's shredded and not grated, it doesn't give the same consistency*
1tsp crushed garlic
(about) 1 cup whipping cream

Make a roux with flour, margarine, and crushed garlic. Add everything else together, saving the cream for last. When adding the cream, do so slowly to get the consistency you want. Let simmer just a few mins to let flavors cook in.


Serve Chicken and cream sauce over cooked pasta.

It's delicious!

Seasoning Mixes and Sauces

I'm always playing around with spices and looking for new ideas. Here are a few that I found the other night. Hope you enjoy!

Fish, Poultry, & Pork Rub
1T thyme
1T oregano
1 1/2tsp poultry seasoning
1tsp rosemary
1tsp marjoram
1tsp basil
1/2tsp salt
1/8tsp pepper

Mix together and store in an air tight container.

Italian Seasoning Mix
1T basil
1T oregano
1T parsley
1T garlic
1tsp thyme
1tsp rosemary
1tsp marjoram

Mix together and store in an air tight container.

Zesty Seasoning Rub
2T lemon pepper
1T garlic salt
1T brown sugar

Mix together and store in an air tight container.


Ultimate Spice Blend - goes great on anything!
1/8c salt
3T garlic powder
3T onion powder
1T black pepper
1T dried oregano
1T chili powder

Mix together and store in an air tight container.

Dry Rub Spicy Style
1T garlic powder
1T paprika
1/2tsp hot chili powder
2tsp cayenne
1tsp salt
1tsp black pepper

Mix together and store in an air tight container.

Memphis Style Rub
4tsp paprika
2tsp salt
2tsp onion powder
2tsp fresh ground pepper
1tsp cayenne
1tsp dry mustard
1T Hickory Grill blend (I use Cajun Injector brand)
1T garlic powder

Mix together and rub on meat. Wrap meat in aluminum foil that has been brushed with Liquid Smoke (hickory).

Memphis BBQ Sauce
2c ketchup
1/2c brown sugar
1/4c cider vinegar
1/2tsp cayenne
1T onion powder
1/2tsp celery seed
1tsp salt
2tsp garlic
1/2c prepared yellow mustard
1T chili powder
1T ground black pepper
2tsp liquid smoke
3T Worcestershire Sauce
2 Canola Oil

Simmer everything together except oil for 25 mins. Remove from heat and whisk in oil.

Buffalo Sauce- This is supposedly a replication of Anchor Bar's sauce, where Buff wings started.
6T Frank's Louisiana Hot Sauce
1/4c margarine (not butter!)
1T white vinegar
1/8tsp celery seed
1/8-1/4tsp cayenne, depending on how hot you want it.
1/8-1/4tsp garlic salt, depending on how much garlic you like.
dash of black pepper
1/4tsp Worcestershire Sauce
1-2tsp Tabasco Sauce, again depending on how hot you want it.

Mix together and heat just enough for margarine to melt.  Makes enough for 30 wingettes.

Cheesy Chicken & Rice Casserole

This is a quick, easy, one pan meal. It's stuff that you more than likely already have in your pantry too.

Cheesy Chicken and Rice Casserole
1can Cream of Chicken Soup
1 1/3cups water
3/4cup uncooked white rice ( i use Valencia rice, but long grain works great too)
1/2tsp onion powder
1/4tsp ground black pepper
2cups frozen mixed veggies
4 skinless, boneless chicken breast halves
1/2cup shredded cheddar cheese

Stir soup, water, rice, onion powder, black pepper and vegetables together in an 11*8 baking dish. Season chicken as you see fit, and lay on top of mixture.Cover with foil. Bake at 375 for 50 mins or until chicken and rice are done. Top with cheese and let stand for 10 mins. Stir rice before serving.

Louisiana French Toast

I found this recipe while stationed in Fort Polk, Louisiana.  It's a delicious twist on traditional french toast, the main difference...there's no milk in this recipe. This will make a caramel-like crust on the outside that just melts in your mouth! So here it is....

Louisiana French Toast
2 eggs, well beaten
2/3c white sugar
1/2tsp vanilla extract
1/4tsp cinnamon
4 slices of bread *bread that is too fresh will fall apart, fyi*
oil for coating the pan
powdered sugar or maple syrup (optional)

Mix eggs, sugar, and vanilla. Dip bread in mixture and brown in oiled pan on medium-low heat. Dust with liberal amounts of powdered sugar. Bon Appetite!
