Seasoning Mixes and Sauces

I'm always playing around with spices and looking for new ideas. Here are a few that I found the other night. Hope you enjoy!

Fish, Poultry, & Pork Rub
1T thyme
1T oregano
1 1/2tsp poultry seasoning
1tsp rosemary
1tsp marjoram
1tsp basil
1/2tsp salt
1/8tsp pepper

Mix together and store in an air tight container.

Italian Seasoning Mix
1T basil
1T oregano
1T parsley
1T garlic
1tsp thyme
1tsp rosemary
1tsp marjoram

Mix together and store in an air tight container.

Zesty Seasoning Rub
2T lemon pepper
1T garlic salt
1T brown sugar

Mix together and store in an air tight container.


Ultimate Spice Blend - goes great on anything!
1/8c salt
3T garlic powder
3T onion powder
1T black pepper
1T dried oregano
1T chili powder

Mix together and store in an air tight container.

Dry Rub Spicy Style
1T garlic powder
1T paprika
1/2tsp hot chili powder
2tsp cayenne
1tsp salt
1tsp black pepper

Mix together and store in an air tight container.

Memphis Style Rub
4tsp paprika
2tsp salt
2tsp onion powder
2tsp fresh ground pepper
1tsp cayenne
1tsp dry mustard
1T Hickory Grill blend (I use Cajun Injector brand)
1T garlic powder

Mix together and rub on meat. Wrap meat in aluminum foil that has been brushed with Liquid Smoke (hickory).

Memphis BBQ Sauce
2c ketchup
1/2c brown sugar
1/4c cider vinegar
1/2tsp cayenne
1T onion powder
1/2tsp celery seed
1tsp salt
2tsp garlic
1/2c prepared yellow mustard
1T chili powder
1T ground black pepper
2tsp liquid smoke
3T Worcestershire Sauce
2 Canola Oil

Simmer everything together except oil for 25 mins. Remove from heat and whisk in oil.

Buffalo Sauce- This is supposedly a replication of Anchor Bar's sauce, where Buff wings started.
6T Frank's Louisiana Hot Sauce
1/4c margarine (not butter!)
1T white vinegar
1/8tsp celery seed
1/8-1/4tsp cayenne, depending on how hot you want it.
1/8-1/4tsp garlic salt, depending on how much garlic you like.
dash of black pepper
1/4tsp Worcestershire Sauce
1-2tsp Tabasco Sauce, again depending on how hot you want it.

Mix together and heat just enough for margarine to melt.  Makes enough for 30 wingettes.
